I originally downloaded this recipe from the SOAR web site almost 6 years ago. I’ve modified it a bit over the years, and the pancakes are always a hit! I made a batch this morning, and decided it was time to share. My changes are in (parens).

GRATED POTATO PANCAKES

Amount Measure Ingredient — Preparation Method

1 Egg
2 (1.5) C Milk
1 1/4 (1) C Sifted enriched flour
1 tsp Sugar
1 tsp Salt
1 d Pepper
1 1/2 lb (3 large) Potatoes
(1/4 C sauteed onion)
(fresh thyme to taste)
(dried dill to taste)
(cayenne, season salt, paprika depending on your mood)
Butter or bacon drippings
Beat egg with a little of the milk. Stir in the sifted dry ingredients alternately with the remaining milk, beating until mixture is smooth.
Wash and peel potatoes, grate directly into batter, then beat well.
Fry on a hot greased griddle and serve hot with crisply fried bacon, with stewed berries, or with applesauce.

I am trying to locate the mailing address of the Homemakers Research Institute. I am trying to secure a copy of Mary Margaret McBride Enclyclopedia of Cooking published by your firm.
I have most of Mary Margaret McBride Enclyclopedia of Cooking Published by your firm from my mother there are a few sections missing and I would love to replace them.
My mother has a cookbook that she purchased in sections from Winn Dixie grocery stores in the 1960’s. The years have taken a toll on the book and some pages are now missing. Several pages show that it was copyrighted in 1960 By The Homemakers Research Institute. Completed the book was about 4-1/2 – 6″ wide and it had a hard cardboard cover that was attached with big plastic screws. The cover is torn so we do not know the name of this book. Any information you have that would lead us to another copy would be greatly appreciated.

I was given the deluxe illustrated edition of The American-International Encyclopedic Cookbook, Published by the Homemakers Research Institute, Thomas Crowell Co. 28 years ago for a wedding gift. It’s the best cookbook ever. I would love to give it as a wedding & graduation gift, however, I can’t find it at any bookstore. Please let me know where I can purchase it. Thanks.
My Mother has a cookbook that she collected over a period of time from the local grocery store sometime in the 60s. Having so much use over the years, it has really seen it’s better days. She is so very interested in finding a new one (or at least one in good condition)…is there anyplace that I could purchase one? I would like to give it to her for her 80th birthday. Please help me.
