Herb Onion Batter Bread

2 C water
2 Tbs sugar
1 Tbs active dry yeast
2 tsp salt
2 Tbs olive oil
1.5 tsp Italian spice mix (Penzey’s Buttermilk Ranch works great)
4 C flour
1/2 onion, dice and cooked till carmelized

Combine water, sugar and yeast. Add salt, oil, spices and 2 cups of the flour and mix by hand for 2 to 3 minutes. Stir in the rest of the flour and then stir in the onions.

Let rise till double in size, 60-90 minutes. Pour into two 4×8 bread pans. Let rise till within 1/2 inch of the top of the pans. Bake in preheated 350 degree oven for 30 to 35 minutes.

The resulting bread is dense and flavorful and has a slightly chewy texture. This was my first attempt at making a yeast batter bread; it won’t be the last.
